Any other software/plugins with a MIDI mapping function can be used with the SFC-OB. Of course when plugin UI and controller UI differ a lot, compromises need to be made and the interface do not fit 1 to 1 anymore.
The purpose of the controllers is to fit as much as possible the plugins to remove the need to remember what is map to what, as you usually have to do using generic traditional MIDI controllers.
Still the controllers are very reliable and sturdy boxes that are sending CC MIDI messages and they can be used with any MIDI software. It doesn’t even have to be vintage style software synths.
The most beautiful example of that is the use of the SFC-8 in Fred Again tiny desk performance, where the SFC-8 front has been relabelled with tape and sharpie, and the CC messages are controlling elements from an Ableton Live set:
